Shrimp Salad with Lime Zest

Ingredients

  • 1 C kosher salt
  • 6 C cold water
  • 2 1/2 lbs shrimp, shelled
  • 3 T heavy cream
  • 1/2 C mayonnaise
  • 1 1/2 t lime zest
  • 1 1/2 T lime juice
  • 1/4 C finely diced celery
  • 2 T finely chopped dill
  • 1 T thinly sliced garlic chives
  • Salt & pepper

Preparation

Step 1

Bring large saucepan of salted water to boil. Prepare a bowl of ice water.
In large bowl, dissolve kosher salt in water. Add shrim & let stand for 30 seconds, thin rinse well. Add shrimp to boiling & cook til firm, @ 2 min. Drain & transfer to ice water to cool.
Drain again & pat dry.
In bowl, beat cream til stiff. Whisk in mayonnaise, lime zest & lime juice; stir in celery, dill & chives. Add shrimp & toss well. season with salt & pepper.
