- 2 slices bacon
- 1/2 cup thinly sliced shapplots
- 3 cups mixed mushrooms
- 4 ears corn kernels cut from cob
- 1/4 cup water
- 1/4 tsp salt
- 1/4 tsp pepper

Step 1
cook bacon in a large skillet over medium heat until crisp,5-7 minutes. transfer to cutting board and chop
discard all but 1 tbsp bacon fat from the skillet. add the shallots and cook stirring until softened about 2 minutes. add muishrooms and cook ctirring until they begin to release their juices about 3 minutes more. add the corn kernels and water and cook until the corn is crisp tender about 5 minutes. remove from heat; astir in the chopped bacon and season with salt and pepper
