Warm Zucchini Tomato Salad

Ingredients
- 1/4 cup plus
- 2 TBS olive oil
- 1 pound small zucchini, thinly sliced
- 2 tomatoes, chopped, juice reserved
- 1 onion, thinly sliced
- 1/4 pound mushrooms, thinly sliced
- 2-3 TBS white wine vinegar
- 1 TBS chopped fresh thyme or 1 teaspoon dried
- 1 TBS chopped fresh chives
- 1/4 cup grated Parmesan cheese

Serves 4—6
Preparation time: 5 minutes
Cooking time: 6 minutes
Heat the oil in a large skillet over moderate beat. Add the zucchini, tomatoes, onion and mushrooms and cook for about 5 minutes, until the vegetables are tender.
Add the vinegar, thyme, chives and the reserved tomato juice and cook for 1 minute. Transfer the mixture to a bowl, toss with the cheese and serve immediately.
