Black Bean Pineapple Salad


The pineapple adds a subtle sweetness to this easy black bean salad recipe.

  • 4 1/2 cups cooked black beans or 3 (14-ounce) cans, drained and rinsed
  • 2 cups pineapple, chopped
  • 5 stalks green onions, chopped
  • 1 bunch cilantro, chopped
  • 2 sweet red pointed peppers, chopped
  • 3 ears corn, cooked and kernels removed
  • 1/2 cup white or red onion, finely chopped
  • 1/4 cup fresh pineapple juice
  • 1/4 cup white balsamic vinegar
  • 1 tablespoon lime juice
  • Fresh ground pepper, to taste

Step 1

In a big bowl, combine the black beans, pineapple, onions, cilantro, red pointed peppers, corn and red onions; mix well.

In a separate bowl, mix together pineapple juice, vinegar and lime juice. Pour over salad and toss. Add fresh ground pepper, to taste. Toss and serve.
