Ingredients

  • 3 cups shifted flour
  • 1-1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3 Eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 1 tablespoon Vanilla
  • 2 full cups grated unpeeled zucchini
  • 1 cup chopped nuts
  • 1 teaspoon flour

Preparation

Step 1

Sift together; flour, cinnamon, baking soda, salt and baking powder.
Beat eggs well. Gradually add sugar and oil mixing well. Add vanilla and dry ingredients. Blend well. Stir in zucchini. Combine nuts with 1 teaspoon of flour. Stir into batter.
Pour into 2 greased 8-1/2 x 4-1/2 x 2-1/2 loaf pans.
Bake at 350º for 1 hour. Cool 10 minutes, wrap tightly and let mellow overnight before slicing.
