Ingredients

  • 2

    c. sifted flour

  • ½

    tsp. baking powder

  • 1

    c. sugar

  • ½

    tsp. salt

  • ½

    tsp. baking soda

  • 1

    large orange

  • 2

    T butter

  • 1

    egg

  • ½

    c. chopped pecans

  • 1

    c. cranberries

Directions

Mix first 5 ingredients together and set aside. Juice and grate the rind of 1 large orange. Add enough boiling water to juice to make 3/4 c. Add 2 T melted butter, 1 beaten egg, and liquids to dry ingredients. Add chopped pecans and cup of cut up cranberries. Bake at 325 degrees in greased loaf pan for 1 hour. Let cool and turn out. Wrap up and use the next day.
