Ingredients
- 1 cup oil
- 3 eggs, beaten
- 2 cups sugar
- 2 cups grated zucchini
- 2 tsp vanilla
- 3 cups AP flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 3 tsp cinnamon
- 1 cup chopped nuts

Step 1
Heat oven to 325.
Combine oil, eggs, sugar, zucchini, and vanilla in a large bowl; blend well. Stir in flour, baking soda, baking powder, salt and cinnamon. Mix. Stir in nuts; mix well. Spoon batter into 2 well greased loaf pans. Bake for 1 1/2 hours.
