Shrimp and Bowtie Pasta with Tequila Lime Cocktail Sauce

Ingredients
- 8 ounces bowtie pasta, cooked according to pkg directions, drained and rinsed
- 8 ounces fresh mushrooms, sliced
- 1 roasted red pepper, fresh or canned, diced
- 1 tablespoon parsley, freshly minced
- 1 jar Stonewall Kitchen Tequila Lime Cocktail Sauce
- olive oil
- 12 ounces shrimp, cleaned, deveined, cooked

Preparation
Step 1
Sauté mushrooms in olive oil until lightly browned. Add roasted pepper just to coat and blend flavors; remove from heat and cool. In a large bowl, toss cooked pasta with sautéed vegetables, freshly minced parsley, shrimp and ½ to ¾ jar of the tequila lime cocktail sauce. Blend well. Additional olive oil may be added at this time. Cover and refrigerate until ready to serve. Toss lightly before serving. Enjoy!
