Red Potatoes and Asparagus

Ingredients
- 1 1/2 pounds red potatoes, cut into chunks
- 2 tbs extra virgin olive oil, divided
- 8 cloves garlic, thinly sliced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 2 tsp kosher salt, divided
- 1 bunch fresh asparagus, rimmed and cut into 1-inch pieces
- Sea salt to taste
- Ground black pepper to taste

Preparation
Step 1
Heat oven to 425 degrees.
In a large baking dish, toss the red potatoes with 1 tbs olive oil, garlic, rosemary, thyme and 1 tsp kosher salt. Cover with aluminum foil.
Bake 25 minutes. Mix in the asparagus, remaining olive oil and remaining kosher salt. Cover, and continue cooking 5 minutes or until potatoes are tender.
Increase oven temperature to 450 degrees. Remove foil and continue cooking 5 to 10 minutes. Season with pepper and serve.
