Citrus Marinated Pork Chops

Ingredients
- 22 limes, juiced
- 22 oranges, juiced
- 1 1/2tbsp.1 1/2 tbsp. balsamic vinegar
- 1tbsp.1 tbsp. Dijon mustard
- 2cloves2 cloves garlic, crushed
- 3sprigs3 sprigs fresh thyme
- 1/2tsp.1/2 tsp. salt
- 1tsp.1 tsp. cracked black pepper
- 1tbsp.1 tbsp. olive oil
- 44 pork chops
- 1tsp.1 tsp. olive oil
- 1tbsp.1 tbsp. unsalted butter

Step 1
1. In a large, nonreactive bowl, combine all ingredients except 1 tsp. olive oil, pork chops and butter; mix well. Add chops, and spoon marinade over them to coat. Marinate for at least 30 min.
2. heat a heavy skillet over medium heat for 2 min. Remove chops from marinade, reserving marinade. Brush pan with tsp. of oil; cook chops for 5 min on each side. Add marinade, lower heat, and cook, covered for 7 min, turning chops once.
3. Remove chops from pan, set aside. Turn up heat to medium high; reduce liquid until thick. Remove from heat, stir in butter and strain. Pour sauce over chops; serve immediately.
