Citrus Marinated Pork Chops

Ingredients

  • 2 2 limes, juiced
  • 2 2 oranges, juiced
  • 1 1/2 tbsp. 1 1/2 tbsp. balsamic vinegar
  • 1 tbsp. 1 tbsp. Dijon mustard
  • 2 cloves 2 cloves garlic, crushed
  • 3 sprigs 3 sprigs fresh thyme
  • 1/2 tsp. 1/2 tsp. salt
  • 1 tsp. 1 tsp. cracked black pepper
  • 1 tbsp. 1 tbsp. olive oil
  • 4 4 pork chops
  • 1 tsp. 1 tsp. olive oil
  • 1 tbsp. 1 tbsp. unsalted butter

Step 1

1. In a large, nonreactive bowl, combine all ingredients except 1 tsp. olive oil, pork chops and butter; mix well. Add chops, and spoon marinade over them to coat. Marinate for at least 30 min.

2. heat a heavy skillet over medium heat for 2 min. Remove chops from marinade, reserving marinade. Brush pan with tsp. of oil; cook chops for 5 min on each side. Add marinade, lower heat, and cook, covered for 7 min, turning chops once.

3. Remove chops from pan, set aside. Turn up heat to medium high; reduce liquid until thick. Remove from heat, stir in butter and strain. Pour sauce over chops; serve immediately.
