Cucumber, Mango, and Black Bean Salad

Ingredients

  • 1 cucumber, cut into 1/2 inch slices,
  • seeded, and diced
  • 1 medium sized mango,
  • cut into 1/4 inch diced pieces
  • 1 can black beans, drained,
  • and rinsed well in a colander
  • 4 Tablespoons lime juice
  • 4 Tablespoons orange juice
  • 1 seeded and minced jalapeno
  • 3 Tablespoons minced cilantro
  • 1/2 teaspoon fine sea salt

Preparation

Step 1

In a glass bowl, combine the salad : cucumber, mango, and black beans. In a separate bowl, combine the dressing : lime and orange juices, jalapeno, salt, and cilantro. Pour the dressing over the salad, and let stand at least 10 minutes.
