Ingredients

    skin on, bone in chicken thighs

    tbsp flour, divided

    cloves garlic

    lemons (zest of one, juice of both)

    tbsp butter

  • 1

    lb frozen corn, thawed

  • 3/4

    cup milk

  • 2

    tbsp chopped fresh chives.

Directions

Preheat oven to 450. heat oil in non stick pan over medium high heat. Sprinkle chicken with salt, pepper, and 2 tbsp flour. Add to skillet and cook, turning, until slightly golden on all sides. (5 minutes) Add the garlic, lemon zest and lemon juice and turn chicken to coat. Transfer skillet to oven and roast until golden brown (20 minutes). Meanwhile, melt butter in medium saucepan over medium high heat. Add the corn and a pinch of salt and pepper; cook, stirring occasionally until corn softens (5 minutes). Stir in remaining flour and milk and bring to a boil. Reduce heat to medium low and simmer until thickened (5 minutes). Stir in chives and season as needed with salt and pepper. Divide chicken among plates and drizzle with pan juices; serve with corn.
