    Tablespoons salad oil

  • 6

    medium zucchini, coarsely shredded

  • 3

    Large garlic clove, minced

  • 8

    ounces dry linguini

  • 1/4

    cup chopped parsley

  • 1/4

    cup butter or margarine

  • 1/2

    cup half and half

  • 1/2

    cup grated Parmesan cheese

  • 1/2

    cup jack cheese, shredded

  • salt and white pepper

Directions

Heat oil over high heat. Add zucchini and garlic, cook stirring just until zucchini is tender-crisp to bite [3-4 minutes] Reduce heat to low. To zucchini mixture., add parsley butter, and half and half, stir lightly until butter is melted. Add pasta, lightly. Season to taste with salt and pepper.
