  • 2 medium tomatoes, peeled, cut in wedges
  • 2 small zucchini, sliced
  • 2 small yellow summer squash, sliced
  • 1/2 teaspoon thyme
  • 1 teaspoon basil
  • 1 teaspoon granulated garlic powder
  • 2 oz. shredded cheddar cheese
  • 2 oz. grated Parmesan or Romano cheese
  • 1/3 cup dry bread crumbs {2oz}
  • 4 oz. shredded mozzarella cheese

Step 1

Preheat oven to 350°F.

Combine tomatoes, zucchini, squash, seasonings and cheddar cheese. Place in a 1.5 qt baking dish. Top with Parmesan or Romano cheese and bread crumbs.

Bake 45 minutes or until vegetables are tender. If you want, you can then sprinkle mozzarella cheese over top and let stand 5 minutes, so the cheese melts, before serving.
