Italian sweet potato lasagna

  • Meat sauce:
  • 1 T olive oil
  • 1 # ground beef
  • 1 t salt
  • 1/2 t black pepper
  • 1 T flour
  • 1 T minced garlic
  • 2 T sour cream
  • 1 C pureed sweet potatoes
  • 1/4 C parmesan cheese
  • Tomato sauce:
  • 2 cans stewed or chopped tomatoes with juice
  • 1 T minced garlic
  • 1/4 C parmesan cheese
  • 1 small onion chopped
  • Cheese sauce:
  • 1 C cottage cheese
  • 1 large egg
  • 1 C mozzarella cheese
  • 1 package lasagna noodles or other pasta for layering
  • 1 C mozzarella
  • cooking spray



Step 1

Spray a large baking dish. Prepare pasta to package directions. Drain and rinse. In skillet heat oil and brown ground beef and garlic. When beef is no longer pink, add salt, pepper, flour, sweet potato puree, and parmesan cheese. Mix well and remove from heat. In blender puree tomatoes, garlic, onions, and parmesan cheese. Pour from blender and set aside, in same blender puree cottage cheese, egg and mozzarella cheese. Spread 1/3rd of the pasta along the bottom of the baking dish. Spread the meat sauce over layer of pasta, then layer another layer of pasta, cover that layer with cheese sauce. Add another layer of pasta and cover with the tomato sauce. Top with C of mozzarella cheese cover with tin foil and bake at 350 for 30-35 minutes. Uncover and bake an additional 10 minutes or until the cheese topping is melted. Let set 10 minutes before cutting.
