Cranberry Relish w/Orange & Ginger

- 1 lg navel orange
- 4 c (approx. 1 lb) fresh cranberries
- 1/2 c sugar to taste
- 1 tsp fresh ginger, peeled and minced or grated

Step 1
Remove entire zest of orange using a vegetable peeler or paring knife. Set aside. Separate the orange into sections, removing all the white membrane. Combine the orange flesh,m zest, cranberries and sugar in the container of a food processor. Process the mixture until it is chunky. Stir in ginger, add more sugar if needed. Let mixture sit for 30 min. before serving. You can also add walnuts or pecans at the end.
