Suspiro Limeño (with sweet potatoes and dulce de leche)


Sure you know about Suspiro Limeño one of the most delicious Peruvian desserts, this is a variety I love because the added of sweet potatoes is really nice. Try it!(Other recipe from my blog)

  • Ingredients
  • 1 tin evaporated milk
  • 1 tin condensed milk (sweetened)
  • 5 eggs
  • 200 grs. sweet potatoes puree
  • (boiled and mashed)
  • 3/4 cup of sugar
  • 1 teaspoon of vanilla
  • 125 ml port wine (red)

Step 1

Put in a sauce pot the condensed milk and the evaporated milk, and cook slow heat stirring all the time with a woodspoon until begin turn in caramel or dulce de leche (beige colour).
Add the sweet potatoes puree mix well and cook by a while until is thickness
Cut the fire.Add the vanilla and the yolks eggs one by one, stir well .
Divide the cream in six glasses and reserve.


In a pot place the sugar and cover with the port wine, heat and wait begin boil and look as golden caramel. Whipp the whites with a pinch of salt beat as merengue and add the caramel to whipped whites.
Divide the merengue over the glases with sweet potatos cream. Garnish with cinnamon powder and let chill on fridge by 1 hour until serve.
