Orange Ginger Turkey Meatloaf

  • 2 strips orange zest
  • 1/2 cup fine whole wheat bread crumbs
  • 1 egg white
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium carrot, coarsely grated
  • 1/2 cup cilantro leaves, finely chopped
  • 2 scallions, thinly sliced
  • 20 ounces lean ground turkey
  • 2 tablespoons hoisin sauce
  • 2 tablespoons ketchup

Step 1

1) Heat oven to 375 degrees. Line a rimmed baking sheet with foil. Thinly slice zest on a diagonal.
2) Place zest, egg white, ginger, garlic, 1 tablespoon water, salt, and pepper and whisk to combine. Stir in bread crumbs. Add carrots, cilantro, and scallions, and mix to combine.
3) Add turkey and mix just until incorporated. Transfer to prepared pan and shape into 9x3-1/2 inch loaf. Bake 25 minutes. Combine hoisin sauce and ketchup; brush over entire loaf. Continue baking until internal temperature is 160 degrees, 10-15 minutes. Let rest 5 minutes before slicing.
