Brown Sugar and Garlic Pork

A friend sent me this simple pork roast recipe which takes minutes to prepare. Only minutes to chomp too! Bacon and brown sugar are a hit with the kids, too.

Ingredients

  • 1 (2.5 to 3-pound) 1 (2.5 to 3-pound) pork loin, butt or shoulder (I used butt)
  • 1 tablespoon 1 tablespoon canola oil
  • Salt to taste
  • Pepper to taste
  • 4 cloves 4 cloves garlic, minced
  • 1/2 cup 1/2 cup light brown sugar
  • 8 to 10 slices 8 to 10 slices bacon

Preparation

Step 1

Trim the pork of any excess fat, especially if using butt or shoulder.

Rub the oil onto the pork to make it nice and sticky. Sprinkle with salt and pepper to taste. I tend to go with more pepper and less salt than usual because the bacon will add plenty of saltiness for you.

Spread the garlic across the top of the pork. Pack the brown sugar all around the pork, especially the top. Drape the bacon over the pork. Tuck the sides of the bacon underneath the pork as well to keep the brown sugar snug. This is optional, but recommended.

Put in a slow cooker for about 4.5 hours.

If the bacon is not crispy enough, put the roast under the broiler for about 5 minutes. If your bacon is still 'floppy' you can also simply remove it at this time; the flavors are already there.
