Red Potato Salad with Bacon & Herbs

Ingredients
- 2 pounds small red potatoes, quartered
- 8 strips of bacon
- 4 hard boiled eggs, chopped
- 1/4 cup minced red onion
- 1/4 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1/2 cup chipped fresh basil
- 1 tablespoon chopped fresh tarragon
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Step 1
1. Place potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat. Reduce heat to medium and simmer for 10 minutes or until potatoes are fork tender. Drain & transfer to a large bowl.
2. Meanwhile, cook bacon until crisp. Chop cooked bacon and add to potatoes, along with eggs and red onion.
3. Stir remaining ingredients together in a small bowl. Add dressing to the potatoes and toss to coat. Serve warm or chilled.
