Cranberry Glazed Pork Roast

Ingredients
- 1 (3-1/2-5 lb.) boneless pork loin roast, seasoned with salt & pepper
- 1 (16 oz.) can whole berry cranberry sauce
- 1/4 c (or more) lemon juice
- 3 Tbsp (or more) brown sugar
- 1 tsp (or more) cornstarch

Preparation
Step 1
1. Preheat oven to 450.
2. Place meat in a shallow baking dish or pan. Roast for 20 minutes.
3. Reduce oven temperature to 325 and continue roasting.
4. Meanwhile, in a small saucepan, combine remaining ingredients and cook over medium heat. Stir until slightly thickened, about 5 min.
5. After meat has cooked for 1 hour, drain off the fat. Spoon half of the sauce over the meat. Continue to roast for 1-1/2 hrs. or until meat thermometer reaches 170, basting occasionally.
6. Spoon remaining sauce over meat. Return to oven for 15-20 min.
7. Let stand for 10-15 min. before slicing.
