Roast Duck with Apple Raisin Stuffing

Delicious roast duck stuffed with an apple raisin stuffing and glazed with orange marmalade. Sounds hard, but is a really easy to prepare dinner, perfect for a special occasion.

Ingredients
- 1/2 cup minced onion
- 1 1/2 cup diced pared cored apple
- 1/2 cup raisins
- 3 1/2 cups lightly packed day old bread
- 3/4 teaspoon salt
- Pepper, to taste
- 2 tablespoons sugar
- 6 tablespoons melted butter or oil
- 1 (5-6 pound) duckling
- Orange marmalade or honey

Preparation
Step 1
Combine all ingredients except honey Stuff cavity and crop of duck.
Place uncovered in preheated 325-350°F oven. Roast 2 hrs 45 min. Remove from oven. Drain fat from pan. Glaze with honey. Roast 20 minutes longer at 425°F.
