Ingredients

  • 1/2

    cup minced onion

  • 1 1/2

    cup diced pared cored apple

  • 1/2

    cup raisins

  • 3 1/2

    cups lightly packed day old bread

  • 3/4

    teaspoon salt

  • Pepper, to taste

  • 2

    tablespoons sugar

  • 6

    tablespoons melted butter or oil

  • 1

    (5-6 pound) duckling

  • Orange marmalade or honey

Directions

Combine all ingredients except honey Stuff cavity and crop of duck. Place uncovered in preheated 325-350°F oven. Roast 2 hrs 45 min. Remove from oven. Drain fat from pan. Glaze with honey. Roast 20 minutes longer at 425°F.
