Ingredients

  • 3 medium eggs
  • 1 cup vegetable oil
  • 1 3/4 cup grated, unpeeled zucchini
  • 1 can (10 02) crushed pineapples, drained
  • 3 cups flour
  • 1 tsp baking soda
  • 1 3/4 cup sugar
  • 2 tsp vanilla
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 3/4 tsp nutmeg
  • 1/4 tsp baking powder

Preparation

Step 1

Beat eggs until light and fluffy. Add sugar a little at a time, continue to beat until well blended. Stir in by hand : oil, vanilla, zucchini and pineapple. Sift dry ingredients and stir into egg mixture 1/3 at a time. Add nuts last (OPTIONAL). Pour into two well greased loaf pans. Bake at 350 degrees for 1 hour. Freezes well
