Ingredients
- 1/4 cup Blue Cheese
- 1/4 cup Walnuts
- 1/4 cup Honey
- 1 tbsp Sriracha hot sauce
- 4 slices sour dough bread
- 4 oz Brie, rind removed
- 1 green Apple, cored and thinly sliced
- 1/2 cup Arugula, roughly chopped, divided
- 4 tbsp butter, divided

Step 1
In a blender or food processor, combine the blue cheese, walnuts, honey and hot sauce until smooth.
Spread Brie on 2 slices of bread and top evenly with apple slices and arugula. Spread the blue cheese mixture remaining slices and close the sandwich.
Head a nonstick skillet or griddle over medium heat. Melt 2 tbsp butter in the pan and cook sandwiches until golden brown, pressing down gently with a spatula. Add remaining butter to pan and carefully flip sandwiches, cooking until cheese has completely melted, about 5 minutes. Transfer sandwiches to a cutting board: let rest for 1 minute before serving.
