Ingredients
- 2 T. vegetable oil
- 1 - pork tenderloin (1 1/2 lb)
- salt and pepper
- 2 cups quartered pitted sweet or sor cherries
- 2 T. red wine vinegar
- 1 T. olive oil
- 1 T. whole grain mustard

Preparation
Step 1
Heat vegetable oil in a medium skillet over high. Season pork tenderloin with salt and pepper: cook, turning occasionally, until golden brown, 10 - 12 minutes. Meanwhile, toss together cherries, olive oil and mustad. Season with salt and pepper.
Slice pork and serve with vinaigrette.
