    C flour

  • C butter, softened

  • C sugar

    tsp orange rind

    6 oz pkg dried cranberries

  • Glaze:

  • ¾

    C sugar

  • ½

    C cranberry sauce

  • ½

    C cranberry juice

  • ¼

    C butter, softened


1. Preheat oven to 350. Grease and flour 10 inch tube pan. Stir together flour, baking powder and salt; set aside. Mix butter, sugar and orange rind in large bowl until fluffy. Beat in eggs, one at a time, scraping often. Add flour mixture, alternately with half and half, beginning and ending with dry ingredients and combining lightly with each addition. Fold in cranberries. Pour batter into pan and bake for 1 hour and 10 minutes. 2. For glaze: bring ingredients in small pan to a boil over medium high heat, stirring constantly. Reduce heat and boil gently for 2 minutes, stirring occasionally. Cool slightly. Remove cake from pan. Brush glaze over cake. Allow cake to absorbe glaze.
