SALAD SPINACH-STRAWBERRY SALAD

Ingredients
- 1 TB cider or balsamic vinegar
- 2 tsp vegetable oil
- 1 tsp Dijon mustard
- 1/2 tsp honey
- Pinch crumled dried rosemary
- Freshly ground pepper and salt
- 1 10oz bag spinach rinsed and torn
- 2 cups strawberries, hulled and halved
- 1/4 sweet onions like Vidalia, very thinly sliced
- 2/3 cup crumbled aged goat cheese or feta cheese
- 2 TB sliced almonds, lightly toasted

Step 1
To toast almonds, heat oven to 350, place almonds on a cookie sheet. Bake until lightly brown, about 5 mins.
Whisk together vinegar, oil, mustard, honey, rosemary, epper and salt in a large bowl. Add the spinach, strawberries and onions; gently toss to coat. Sprinkle salad with cheese and almonds and serve at once.
