Sweet Potato stuffing with Bacon and Thyme

Ingredients
- 1 1/2 lb sourdough baguette, cut into cubes
- 1 lb bacon slices, cut into pieces
- 2 tbsp butter
- 6 1/2 cups peeled sweet potato cubes
- 4 cups onion pieces (2 onions)
- 3 cups celery pieces
- 1 1/2 tbsp chopped thyme
- 1 1/4 tsp salt
- 1 1/3 cups orange juice
- 3 eggs
- 1 1/3 cups chicken broth

Step 1
Preheat oven to 350. Spread bred cubes on baking sheet, bake 10 minutes. Cool. Place in large bowl.
Cook bacon in heavy large pot, transfer to paper towels to drain, leave drippings in pot. Add butter to pot, then sweet potatoes, onions, celery, thyme, and salt. Saute until onions are soft 6-8 minutes. Add orange juice and boil, cook until potatoes are tender. 5 minutes. Season with more salt and pepper. Cool slightly.
Butter 10 by 15 inch baking dish. Whisk eggs and chicken broth in a bowl, add to stuffing and toss. Transfer to baking dish. Bake until browned 50 minutes to 1 hour.
