Coconut Rice Crispy Cookies

  • 1/2 Cup Unsalted Butter
  • 1 Cup Brown Sugar, packed
  • 1 Large Egg
  • 1 tsp. Vanilla
  • 1 Cup Flour
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Baking Powder
  • 2 Cups Rice Krispies
  • 1 Cup Flaked Coconut
  • 1 Cup Butterscotch Chips



Step 1

In a large electric mixer bowl, place butter, sugar, egg, and vanilla. Beat on medium speed until mixture is creamy. Combine flour, baking soda, and baking powder. Add to wet mixture and beat on low speed. Add cereal, coconut, and chips on low speed and combine. Chill dough for 30 minutes for easier handling. Shape dough into 1" balls and place on cookie sheets 2" apart. Bake in a preheated oven at 350 degrees for 8-9 minutes. Remove from oven, let stand on cookie sheet for 1 minute before removing to wire rack to cool. Makes 3 1/2 dozen cookies.
