Pork, Sweet Potato, and Kale Soup

Ingredients
- 3 pounds lean pork cut into bite-size cubes
- 1 chopped medium yellow onion
- canola or olive oil
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon coriander
- 1 teaspoon oregano
- 1/2 teaspoon dry mustard
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 2 pounds peeled cubed sweet potatoes
- 1 15 ounce can diced tomatoes1 cup chicken broth
- 3 Tablespoons molasses
- 3 Tablespoons cider vinegar
- 3 Tablespoons flour
- 4 cups chopped stemmed kale

Preparation
Step 1
Brown the onion and then the pork cubes in oil. Add the spices and cook about 1 minutes. Combine in a soup pot : sweet potato cubes, diced tomatoes, chicken broth, molasses and vinegar. Cook until pork is tender and no longer pink. Remove 1 cup of the pot liquid : whisk in the flour, then return to pot. Add the kale. Simmer 30 minutes.
