Ingredients

    pounds lean pork cut into bite-size cubes

    chopped medium yellow onion

  • canola or olive oil

  • 2

    teaspoons chili powder

  • 2

    teaspoons cumin

  • 1

    teaspoon coriander

  • 1

    teaspoon oregano

  • 1/2

    teaspoon dry mustard

  • 1/2

    teaspoon sea salt

  • 1/2

    teaspoon pepper

    pounds peeled cubed sweet potatoes

  • 1

    15 ounce can diced tomatoes1 cup chicken broth

  • 3

    Tablespoons molasses

  • 3

    Tablespoons cider vinegar

  • 3

    Tablespoons flour

  • 4

    cups chopped stemmed kale

Directions

Brown the onion and then the pork cubes in oil. Add the spices and cook about 1 minutes. Combine in a soup pot : sweet potato cubes, diced tomatoes, chicken broth, molasses and vinegar. Cook until pork is tender and no longer pink. Remove 1 cup of the pot liquid : whisk in the flour, then return to pot. Add the kale. Simmer 30 minutes.
