Blueberry Banana Nut Oatmeal

Ingredients
- 1/2 cup Old Fashioned or Steel Cut Oatmeal (don't use the Quick Cooking ones, too gummy)
- 1/2 cup water
- 1/2 cup any milk (vanilla almond milk works great; dairy milk is fine)
- 1 small banana, thinly sliced, divided
- 1 Tablespoon brown sugar (or less, to taste)
- 1/2 teaspoon vanilla
- 1/2 cup blueberries
- 2 Tablespoons chopped nuts (walnuts or almonds work well)

Preparation
Step 1
Pour 1/2 cup of oatmeal into a saucepan, then stir in the water and milk. Add HALF of the sliced banana, and stir briefly to combine, then cook over medium heat, until the mixture just begins to boil.
While the mixture bubbles, stir gently until the oats have absorbed nearly all the liquid and become creamy, about 3 minutes.
Remove the pan from the heat, and stir in the brown sugar and vanilla. Pour into a bowl, and top with the remaining banana, blueberries, and nuts.
