Ingredients
- 1 1/2 tsp baking soda
- 1/4 cup warm water
- 1 1/2 cup shredded carrots
- 1 cup raisins
- 3/4 cup granulated sugar
- 1/2 cup plain nonfat yogurt
- 1/2 cup unsweetened applesauce
- 1/4 cup veg/canola oil
- 1 large egg
- 2 tsp ground cinnamon
- 1/2 tsp ground cloves & nutmeg
- 1/2 tsp salt
- 1 cup whole wheat flour
- 1 cup all purpose flour

Preparation
Step 1
1. Heat oven to 325 degrees. Grease an 8 or 9 inch baking pan.
2. Mix baking soda & water in a small bowl.
3. In a large bowl, mix carrots, raisins, sugar, yogurt, applesauce, oil, egg, cinnamon, cloves, nutmeg, salt.
4. Stir in flours, then baking soda mixture. Spread in the baking pan.
5. Bake 1 hour or until done.
Makes 8 servings.
