Linguine With Halibut & Tomato

Ingredients

  • 1 lb white fillet (halibut or cod) cut into 1/4 strips
  • 1/4 cup extra virgin olive oil
  • 1/2 cup basil, finely chopped
  • 4 garlic cloves, 1 crushed, 3 minced
  • 1/2 cup fine leaf chives, finely chopped
  • 1 lb vine ripened tomatoes, peeled, seeded, and chopped
  • 1 cup dry white wine sauce
  • salt and pepper
  • 1 lb linguine cooked

Step 1

Toss fish with 2 Tablespoons of olive oil and basil. In a large skillet, combine the remaining 2 Tablespoons olive oil and crushed garlic. Cook over moderately high heat, stiring frequently, until garlic turns golden brown. Discard garlic.

Add minced garlic adn chives to casserole and cook, stiring occasionally, until soft, approximately 4 minutes. Stir in tomatoes and wine, reduce heat to moderate and simmer 15 minutes. Raise heat to moderate high, add fish and cook until opaque, approx 5 minutes. Season with salt and pepper. Add pasta to fish, toss and serve.
