Lime Basted pork chops with plum relish

Ingredients
- 1/2 cup fresh lime juice, divided
- 1/3 cup finely chopped unpeeled sweet red plum
- 2 tablespoons finely chopped unpeeled tomato
- 1 tablespoon finely chopped green onions
- 2 drops hot sauce
- 2 (4 ounce) lean, boneless center cut loin pork chops (about 3/4 inch thick)
- 1 teaspoon minced fresh thyme
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- vegetable cooking spray

Preparation
Step 1
1. Combine 1/2 teaspoon lime juice and next 5 ingredients in a bowl; stir well. Cover and chill.
2. Place pork between 2 sheets of heavy duty plastic wrap, and flatten to 1/2 inch thickness, using meat mallet or rolling pin. Press thyme into both sides of pork; sprinkle with salt and pepper. Place in a shallow dish; pour remaining lime juice lime juice over pork. Cover and marinate in refrigerator 1 hour.
3. Remove pork from marinade; set aside, reserving marinade. Coat grill rack with cooking spray, and place on grill over medium-hot coals. Place pork on rack, and cook 8 minutes on each side, basting occasionally with reserved marinade.
