Ingredients
- 2 c. yellow onions '/4-inch dice)
- 2 tbsp, blended olive oil
- 1 tsp. fresh thyme (chopped)
- 1/2 tsp. freshly ground pepper
- 3/4 c. young chevre
- 1 c. cured chorizo '/B-inch dice)
- 12 Medjool dates
- 1 c. all-purpose flour
- 3 eggs
- 1 c. milk
- 1 c. breadcrumbs
- 1 oz. frisee
- 2 tbsp. bacon vinaigrette
- 1 tbsp. smoked bacon (cooked and
- crumbled)

Step 1
Over medium heat, Saute the onions in the olive oil until soft, but not browned. Add the thyme and black pepper. Fold the onion mixture into the chevre. Add the chorizo and mix well. Chill. Cut the dates in half and remove the pits. Fill the dates with 1 tablespoon of the chorizo-chevre mixture. Roll the dates in the flour. Whisk the eggs with the milk. Dredge the dates in the egg mixture. Coat the dates in the breadcrumbs. Chill. Fry the dates in oil until golden brown. Toss the frisee in the bacon vinaigrette, sprinkle with smoked bacon, and serve.
