SMOKED SALMON WITH LIME-DRESSED CUCUMBER

Ingredients
- 12 ounces smoked salmon, thinly sliced
- 1 English cucumber
- 1 tablespoon Dijon mustard
- Juice of 1 lime
- 1/2 cup olive oil
- Salt and freshly ground pepper

Step 1
Arrange the salmon in overlapping slices , on 8 chilled appetizer-size plates, leaving Cut the cucumber in half lengthwise, scrape out the seeds and slice it thin. Put the slices in a bowl. Put the mustard, lime juice and olive oil in a jar, cover it tightly and shake until thoroughly combined. Season to taste with salt and pepper. Toss the cucumbers with this dressing and divide the mixture among the plates, letting the smoked salmon slices remain visible. Serves 8.
