Shrimp Slaw with Cilantro Lime Vinaigrette

Ingredients

  • 1 1/2 lbs large shrimp
  • 1/3 C lime juice
  • 3 T olive oil
  • 1 jalapeno, seeded & minced
  • 1 clove minced garlic
  • Salt & pepper
  • 1/2 lb shredded green cabbage
  • 1/4 lb shredded red cabbage
  • 1/4 lb jicama, cut into thin matchsticks
  • 1 carrot, coarsely grated
  • 1 C cilantro leaves

Preparation

Step 1

Saute shrimp in olive oil. Let cool.
In large bowl, whisk lime juice, oil, jalapeno & garlic & season with salt & pepper. Add green & red cabbages, jacama, carrot & cilantro; toss well. Add shrimp, toss again & serve right away.
