Ingredients

  • lbs large shrimp

  • C lime juice

  • 3

    T olive oil

  • 1

    jalapeno, seeded & minced

  • 1

    clove minced garlic

  • Salt & pepper

  • ½

    lb shredded green cabbage

  • ¼

    lb shredded red cabbage

  • ¼

    lb jicama, cut into thin matchsticks

  • 1

    carrot, coarsely grated

  • 1

    C cilantro leaves

Directions

Saute shrimp in olive oil. Let cool. In large bowl, whisk lime juice, oil, jalapeno & garlic & season with salt & pepper. Add green & red cabbages, jacama, carrot & cilantro; toss well. Add shrimp, toss again & serve right away. 191 cal.
