Ingredients
- 1 1/2 lbs large shrimp
- 1/3 C lime juice
- 3 T olive oil
- 1 jalapeno, seeded & minced
- 1 clove minced garlic
- Salt & pepper
- 1/2 lb shredded green cabbage
- 1/4 lb shredded red cabbage
- 1/4 lb jicama, cut into thin matchsticks
- 1 carrot, coarsely grated
- 1 C cilantro leaves

Step 1
Saute shrimp in olive oil. Let cool.
In large bowl, whisk lime juice, oil, jalapeno & garlic & season with salt & pepper. Add green & red cabbages, jacama, carrot & cilantro; toss well. Add shrimp, toss again & serve right away.
