Mashed Acorn Squash

Ingredients
- 2 acorn squash, cut in half and seeded (cut top and bottom off also to even them out for cooking)
- 2 T. olive oil
- 2 shallots, chopped
- 2-3 cloves garlic, minced
- salt and pepper
- 1 T. pumpkin pie spice
- Juice of a lemon

Preparation
Step 1
Heat oven to 350 F. Place squash on a cookie sheet. Season with seasonings, sprinkle with garlic and shallots. Drizzle with olive oil. Then squeeze the lemon juice over all four pieces. Bake for 1 hour or until tender.
Carefully spoon out the squash and other ingredients and place in a bowl. Use a fork to mash the squash and mix in all ingredients.
