If I’m going to eat candy, I’d much rather make it myself than buy it at a store
- For the crust:
- 2 cups almond flour
- 4 tablespoons coconut flour
- 1/2 teaspoon unflavored gelatin (this provides structure for the crust. I prefer Bernard Jensen’s or Great Lakes)
- 1/4 teaspoon Celtic sea salt
- 2 tablespoons honey
- 8 tablespoons unsalted butter or 6 tablespoons ghee, cold, cut into tablespoons
- For the Caramel:
- 8 tablespoons unsalted butter or 6 tablespoons ghee
- 1 cup pure maple syrup
- 1 1/2 cup heavy cream or full-fat, canned coconut milk
- For the Chocolate:
- 6 ounces bittersweet or semisweet chocolate (I prefer Equal Exchange or Trader Joe's because they are soy-free)
- 1 tablespoon coconut oil

Turn oven on to 375. Line a 7 1/2 by 7 1/2 pan (or a pan of similar size) with a sheet of parchment paper
- Yeast Mixture:
- 3/4 cup of Applesauce
- 1 TBSP Fast Acting Yeast
- The Rolls:
- 3/4 Packed Cups of Coconut Flour
- 1/2 Cup + 2 TBSP of Tapioca Starch (or arrowroot)
- 3/4 Cup organic Cane Sugar
- 1/4 Tsp. Salt
- 1 Tsp. Xanthan or Guar Gum
- 1 TBSP of Baking Powder (I used Bobs Red Mill Double Acting. Its mild tasting and works great!)
- 1/2 Cup + 2 TBSP of Shortening. (I use the brand Spectrum)
- 3 Large Eggs
- Cinnamon Roll Filling:
- 2 Tbsp of a Mild Flavored Oil or Melted Butter (dairy or nondairy)
- 1/2 Cup of Coconut Palm Sugar, Sucanat Sugar or Brown Sugar

- 1 medium sweet potato, peeled and grated

After you have the ingredients prepped, make a paste of the curry and lime juice so you can smear it over the roast...
- 1 can of coconut milk (NOT light)
- 1/2 bunch of washed, chopped cilantro
- 1-2 limes, juiced
- 2 T Thai red curry paste (make sure the ingredients fit the bill, I used Thai Kitchen brand) we used more for more spice
- 3 packets (more or less, your choice) of garlic (or about 20+ cloves)
- 3-4 (or more) -lb grass-fed beef roast or pork roast (sirloin and chuck have worked well), deeply scored for more surface area
- NOTE: despite being a curry, this one is very mild on the spiciness--if you want to liven it up, try adding some heat yourself (more/hotter curry paste, hot peppers, cayenne, etc.).
