Mandarin Chicken Salad

Combine the lettuce, carrot, and red cabbage in a large bowl
- 1 head of Iceberg lettuce, chopped
- 1 cup grated carrots
- 1 cup shredded red cabbage
- 1 cup julienned red bell pepper
- 1 cup julienned green bell pepper
- 1 cup julienned onion
- 2 cups water
- 3/4 cup honey
- 3/4 cup Dijon mustard
- 4 cooked boneless skinless chicken breasts,
- cut into 1 inch pieces
- 1/2 cup slivered almonds
- 1 ( 11 ounce ) can of mandarin oranges, drained
Breakfast Sausage Chili

- 2 Tablespoons olive oil
- 6 ounces bulk breakfast sausage
- 1 finely-chopped green bell pepper
- 1 diced Serrano pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 16 ounce can dark red kidney beans, rinsed
- 14 ounce can diced Mexican style tomatoes
- 1 cup water
Green Tomato Bread

- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups finely-chopped green tomatoes

- 1 teaspoon salt

Sweet Potato Chips with Lime Yogurt Sauce

Preheat oven to 400 degrees
- sauce:
- 4 Tablespoons olive oil
- 1 Tablespoon cumin
- 2 teaspoons paprika
- 2 teaspoons ginger
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 medium-sized sweet potatoes,
- thinly sliced ( 2 pounds or about 7 cups )
- 1/2 cup plain yogurt or light sour cream
- 2 Tablespoons chopped cilantro
- 2 Tablespoons minced pecans
- 2 teaspoons lime juice
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
Curried Chicken and Apple Pita Sandwiches

Combine the dressing ingredients in a small bowl : the mayonnaise, yogurt, curry powder, salt, cayenne, and garlic
- 1/4 cup mayonnaise
- 1/4 cup yogurt
- 1 teaspoon curry powder
- 1 clove peeled and minced garlic
- 2 cups cooked and diced chicken
- 5 chopped green onions
- 1 large chopped red bell pepper
- 1 cup peeled and diced ( 1 small )
- Gold Delicious apple
- 2 Tablespoons minced cilantro

Asparagus Snow Pea Salad

- 5 ounces asparagus spears
- 1 Tablespoon peanut oil
- 1 teaspoons sesame oil
- 1 Tablespoon red wine vinegar
- 1/2 teaspoon sugar
- 1 Tablespoon sesame seeds
- 7 ounces snow peas
- lemon slices for garnish
Baked Parmesan Artichoke Chicken

Preheat oven to 375 degrees
- 2-4 boneless skinless chicken breasts
- 15 ounce jar drained artichoke hearts, chopped
- 3/4 cup mayonnaise
- 3/4 cup grated fresh Parmesan cheese
Ginger Cashew Chicken Salad

Preheat oven to 350 degrees
- 1/2 cup cider vinegar
- 1/2 cup molasses
- 1/3 cup canola oil
- 2 Tablespoons minced peeled ginger-root
- 2 teaspoons soy sauce
- 1 teaspoon salt
- 1/2 teaspoon cayenne
- 4 six-ounce boneless skinless chicken breasts
- 8 ounces / 10 cups baby spinach
- 11-ounce can drained mandarin oranges
- 1 cup shredded red or Napa cabbage
- 2 medium peeled shredded carrots
- 3 thinly sliced green onions
- 2 cups chow mein noodles
- 3/4 cup toasted salted cashews
- 2 Tablespoons toasted sesame seeds
Mushrooms in Wine

Saute mushrooms in butter
- 1 pound mushrooms, sliced
- 1/4 cup butter
- 3 Tablespoons chopped chives
- 3 Tablespoons chopped parsley
- 6 Tablespoons dry white wine
- salt and pepper to taste
