Asparagus Snow Pea Salad

  • 5 ounces asparagus spears
  • 1 Tablespoon peanut oil
  • 1 teaspoons sesame oil
  • 1 Tablespoon red wine vinegar
  • 1/2 teaspoon sugar
  • 1 Tablespoon sesame seeds
  • 7 ounces snow peas
  • lemon slices for garnish



Step 1

Steam or blanch the asparagus spears. Cover the asparagus spears with ice water and then drain. Cut the asparagus spears in half or into bite-size pieces. Combine the peanut oil, sesame oil, red wine vinegar, and sugar. Toast the sesame seeds in a dry skillet at medium heat for 1-2 minutes. Combine the snow peas with the asparagus spears. Add the oil and vinegar mixture. Sprinkle with the sesame seeds. Garnish with lemon slices
