Cream of Tomato Soup

Saute onion in melted butter
- 2 Tablespoons butter
- 1 small yellow onion, chopped
- 1/4 cup flour
- 1 cup milk
- 28 ounce can of Italian style tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- salt & pepper to taste
- 1/2 pint whipping cream
Sweet and Sour Red Bean Salad

Warm the cooked beans, and in a medium-sized bowl, combine with the vegetable oil, red wine vinegar, salt, pepper, ...
- 2 cups cooked small red beans
- or 1 can of chili beans, drained and rinsed
- 1/2 cup vegetable oil
- 1/2 cup red wine vinegar
- 1 teaspoon salt
- 2 Tablespoons sugar
- 1/2 teaspoon black pepper
- 2 Tablespoons warm bacon grease
- 1 cup sliced celery
- 1/2 cup chopped red onion
- 1/2 cup chopped parsley
- 4 slices crisp-cooked and crumbled bacon
Mashed Neeps

- 4 medium sized turnips, peeled,
- and cut into thin strips
- boiling water to cover
- 1/2 teaspoon sugar
- 1 Tablespoon sour cream
- 2 Tablespoons butter
- freshly-ground black pepper
- 2 Tablespoons chopped parsley
Slow Cooker Ropa Vieja

Place all ingredients except the cilantro and jalapenos in the slow-cooker, and cook on low for 8 hours
- 3 pounds flank or thin-cut round steak
- 1 large chopped white or yellow onion
- 2 stalks thinly sliced celery
- 3 cloves minced garlic
- 1 Tablespoon cumin
- 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1 1/2 cups chicken broth
- 1/4 cup sherry vinegar

Irish Apple Cake

Preheat oven to 350 degrees
- 1 cup honey
- 1/2 cup Irish whisky or dark rum
- 1/2 teaspoon ground cloves
- 1/2 teaspoon cinnamon
- 2 1/2 cups bread crumbs
- 4 apples, peeled, cored, thinly sliced
- 1/4 cup golden raisins

Blueberry Ginger Crisp

Soften butter. Preheat oven to 375 degrees
- 4 Tablespoons + 1/2 cup flour
- 1 Tablespoon sugar
- 1 Tablespoon chopped candied ginger
- 3 cups blueberries
- 2 Tablespoons lemon juice

- 1/2 cup quick-oats

Sweet Spicy Crockpot Pork Tacos

- 3 pound Boston Butt pork roast
- 2 ten-ounce cans diced tomato
- 2 chopped ancho chile peppers in adobo sauce
- 2 Tablespoons cider vinegar
- 2 Tablespoons dark brown sugar
- 1/4 teaspoon cumin

Classic Bread Pudding

- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 eggs
- 1 quart milk
- 1 teaspoon vanilla

- 1/2 cup raisins
- 2 Tablespoons melted butter
