Ingredients

    head of Iceberg lettuce, chopped

  • 1

    cup grated carrots

  • 1

    cup shredded red cabbage

  • 1

    cup julienned red bell pepper

  • 1

    cup julienned green bell pepper

  • 1

    cup julienned onion

  • 2

    cups water

  • 3/4

    cup honey

  • 3/4

    cup Dijon mustard

  • 4

    cooked boneless skinless chicken breasts,

  • cut into 1 inch pieces

  • 1/2

    cup slivered almonds

  • 1

    ( 11 ounce ) can of mandarin oranges, drained

Directions

Combine the lettuce, carrot, and red cabbage in a large bowl. Optional : bring the water to a boil, remove from heat, blanch the bell peppers and onion in the water for 2 minutes, and then add the drained vegetables to the lettuce mixture;otherwise, just add the raw vegetables to the lettuce mixture. Combine the honey and mustard, then toss with the cooked chicken. Add the chicken to the lettuce mixture. Serve portions in individual salad bowls, garnished with mandarin oranges and almonds. Another form of dressing consists of 1/4 cup of honey and 1/4 cup of old-style seeded mustard, with Paul Newman's lime dressing added to taste.
