Curried Chicken and Apple Pita Sandwiches

  • 1/4 cup mayonnaise
  • 1/4 cup yogurt
  • 1 teaspoon curry powder
  • 1 clove peeled and minced garlic
  • 2 cups cooked and diced chicken
  • 5 chopped green onions
  • 1 large chopped red bell pepper
  • 1 cup peeled and diced ( 1 small )
  • Gold Delicious apple
  • 2 Tablespoons minced cilantro
  • lettuce leaves and pita bread halves


Servings 4


Step 1

Combine the dressing ingredients in a small bowl : the mayonnaise, yogurt, curry powder, salt, cayenne, and garlic. In a separate bowl, combine the chicken, green onions, red pepper, apple, and cilantro. Add the dressing to the chicken mixture. Serve with lettuce leaves and pita bread halves.
