Creamcheese Slaw

This recipe works well when halved
- 5 cups shredded or finely-sliced Napa cabbage
- 1 peeled Granny Smith apple,
- cut in 8 wedges and then cut crosswise in 1/2 inch slices
- 1/2 of an 8-ounce tub of Honey Nut flavored cream cheese spread
- 1/4 cup mayonnaise
- 2 Tablespoons seasoned rice vinegar
- garnish : 2 Tablespoons chopped pecans
Microwave Berry Cobbler

Perfect for hot summer days when you don't want to use your regular oven
- 1/4 cup softened butter
- 1/2 cup sugar
- 1 cup flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/3 cup milk
- 1 1/2 cup berries
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 cup orange juice
- cool-whip for garnish
Chicken Thighs in Mushroom Sauce

Rinse the chicken thighs and pat dry
- 1 1/2 pounds boneless skinless chicken thighs
- 2 Tablespoons olive oil
- 2 Tablespoons butter
- 2 Tablespoons chicken seasoning
- 8 ounces sliced mushrooms
- 1 clove minced garlic
- 3 Tablespoons flour
- 1 cup chicken broth
- 1/3 cup dry white wine ( such as Chardonnay )
- 1/2 cup cream or half-and-half
- 2 Tablespoons chopped parsley
Sour Cream Baby Biscuits

You may need to buy a mini-muffins tin to make this recipe, but it will be so worth it !!
- 1 stick butter
- 1/2 cup sour cream
- 1 cup self-rising flour
- ( or 1 cup all-purpose flour
- plus 1 1/2 teaspoons baking powder
- and 1/2 teaspoon salt )
Southern Corn Chowder

This recipe can be halved
- 8 ears of corn
- 4 Tablespoons butter
- 1 large diced green pepper
- 2 large diced potaoes
- 1/4 cup minced parsley
- 2-3 Tablespoons flour
- 4 cups milk
- 16 ounces heavy cream
- 1/2 pound cooked and crumbled bacon
- or breakfast sausage
Pimento Cheese Grits and Ham

slow cooker
- 4 1/2 cups chicken broth
- 3 Tablespoons butter
- 1 1/2 cups stone-ground yellow grits
- 1/2 teaspoon black pepper
- 1 pound smoked cooked ham cut into 1 inch pieces
- 3 ( 2 ounce ) jars drained pimentos
- 1/2 cup ( 2 ounces ) shredded Swiss cheese
- 1/2 cup heavy cream
Zucchini and Yellow Squash Gratin

Preheat oven to 450 degrees
- 2 Tablespoons butter
- 8 ounces each ( about 2 ) medium-sized yellow squash and zucchini
- 1 shallot, minced
- 2 cloves of garlic, minced
- 1/2 cup heavy cream
- 1 cup Panko bread crumbs, divided
- 1/2 cup Parmesan cheese, divided
Aztec Onion Broth

Simmer about one hour. Strain to remove vegetables
- 4 cups water
- 1 medium tomato, cut into 1 inch cubes
- 1/2 medium onion, or 8-10 scallions, cut into small pieces
- 2 peeled carrots, cut into 1 inch pieces
- 2-3 celery stalks, cut into 1 inch pieces
- 1/4 teaspoon dried rosemary
- 3/4 teaspoon sea salt
Thai Roll-Ups

Prepare the first 10 ingredients, and arrange on plates or a serving platter
- Hoisin Dipping Sauce :
- 12-16 Boston lettuce leaves
- 8 ounces cocktail shrimp
- 1 cup cooked shredded chicken breast
- 1/2 cup finely chopped peanuts
- 1/2 cup shredded coconut
- 2 cups rinsed, drained, and dried bean sprouts
- 2 limes, seeds removed, then finely chopped, rind and all
- 4-6 small hot chiles, slivered
- 4-6 slivered scallions
- 1 cup fresh coriander sprigs
- 1/4 cup commercially-prepared hoisin sauce
- 1/4 cup rice vinegar
- 2 Tablespoons fish sauce
- 2 Tablespoons grated or minced ginger-root
- 1 teaspoon sugar
Glazed Lemon Bread

- 1 1/2 cups all-purpose flour
- 1 cup sugar
- peel of 1 lemon
- 1 Tablespoon baking powder
- juice of 2 lemons, used 1 at a time
- 1/2 cup milk
- 2 eggs
- 1/2 cup melted butter
- 1 teaspoon vanilla
- 1/3 cup sugar ( 1/4 cup if preferred )
- juice of the 2nd lemon
