Eggplant Gratin

Preheat oven to 400 degrees
- 2 Tablespoons olive oil
- 1 finely chopped yellow onion
- 1 clove minced garlic
- 1 eggplant, in 1/4 inch slices
- 2-4 more Tablespoons olive oil, as needed
- 2 teaspoons chopped parsley
- 1 teaspoon dried thyme
- salt and pepper to taste
- 14 ounce can whole tomatoes,
- chopped, plus juice
- 1 cup grated mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Paula Deen's Cucumber, Tomato, and Onion Salad

Combine the cucumbers, tomatoes, parsley, and onion
- 2 cucumbers, peeled, and thinly sliced
- 1 pint cherry tomatoes, halved
- 1 Tablespoons fresh Italian parsley, chopped
- 1/2 of a white onion, sliced very thin
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon olive oil
- salt & pepper to taste
Crock-Pot Yellow-Eye Beans

Soak the beans overnight. Drain, rinse, and add water to cover
- 2 cups dried yellow-eye beans
- 1/4 cup chopped white or yellow onion
- 2 Tablespoons butter
- 2 Tablespoons brown sugar
- 1 Tablespoon sea salt
- 1/4 teaspoon ground ginger
- 1/2 teaspoon dry mustard
- 1/2 teaspoon dried thyme
- 3/8 about 3/8 cup molasses
- 1/2 about 1/2 cup hot water
Fresh Tomatoes, Basil, and Feta Sandwiches

Combine the tomatoes, basil, olive oil, and Feta cheese
- 1/3 cup fresh ( preferably home-grown ) tomatoes,
- coarsely chopped
- 1 teaspoon fresh basil leaves, chopped
- ( or oregano, or Italian parsley )
- 1 teaspoon olive oil
- 1 Tablespoon crumbled Feta cheese
- sliced whole-grain bread
Banana Bread Fruitcake

- 1 package Pillsbury banana bread mix
- 3/4 cup water
- 1/4 cup rum
- 1 Tablespoon vegetable oil
- 1 slightly beaten egg
- 3/4 cup chocolate chips
- 3/4 cup chopped pecans or walnuts
- 3/4 cup halved maraschino cherries
Tuna Steaks with Avocado Relish

Remove skin from the tuna steaks, rinse steaks, and pat dry
- Avocado Relish :
- 2 tuna steaks, about 6 ounces each
- 1 teaspoon grated lime peel
- 1 finely chopped garlic clove
- 1 Tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- black pepper to taste
- 1 Tablespoon lime juice
- 1 teaspoon chopped cilantro
- 1 avocado, chopped
- 1 Tablespoon lime juice
- 1 Tablespoon chopped cilantro
- 2 Tablespoons minced red onion
- chopped fresh tomato or mango to taste
