Fish Tacos

Heat butter at medium-high, and cook onion and tomato until wilted
- 1 Tablespoon butter
- 1 cup thinly-sliced onion
- 1 cup chopped tomato
- 1 Tablespoon lime juice
- 1 Tablespoon butter
- 1/4 teaspoon ground chipotle chili pepper
- or chili powder
- 1/4 teaspoon sea salt
- 2 ( 12 ounces total ) tilapia fillets,
- halved lengthwise
- 2 Tablespoons minced cilantro
- 5 multi-grain flour tortillas
- lettuce and sour cream for garnish
Artichoke, Roasted Pepper, & Olive Pasta Sauce

This is a no-cook sauce ( that can also be heated
- garnish :
- 8 ounces rigatoni pasta
- 2 Tablespoons olive oil
- 1 finely chopped garlic clove
- 14 ounce jar of marinated artichoke hearts,
- drained and chopped
- 1/2 cup roasted red peppers, coarsely diced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/2 cup fresh basil, cut into thin strips
- 1/2 cup ( 2 ounces ) crumbled feta cheese
- all ingredients need to be at room temperature,
- if a no-cook sauce is intended
Feta Cheese Ball

Mix all ingredients together
- 8 ounces softened cream cheese
- 4 ounces crumbled feta cheese
- 2 Tablespoons chopped green onion
- 2 Tablespoons sliced black olives
- 2 Tablespoons chopped fresh basil
- ( or 1 Tablespoon dried basil )
- grapes, garlic bagel-chips,
- and pita-bread triangles
Spiced Watermelon Rind Pickles

Bring the water, salt, and rinds to boil over medium-high heat
- 8 cups cold water
- 2 teaspoons coarse sea salt or pickling salt
- 5 cups watermelon rinds,
- cut into 1/2 inch x 2 inch pieces,
- with a thin layer of watermelon flesh
- left on the rind
- 1 3/4 cups sugar
- 1 cup cider vinegar
- 1 teaspoon peppercorn
- 8 whole cloves
- 2 long slices of peeled ginger-root
Summer Squashes & Beans Saute

This dish is served over rice
- 1 cup white medium or long-grain rice,
- cooked in 1 cup water
- 2 chicken ( or beef ) buillon cubes
- 1 cup water
- 2 teaspoons cornstarch
- 1 Tablespoon peanut ( or olive ) oil
- --- peanut oil heats faster & holds high heat better, it is preferred for stir-frying in a wok
- 1 medium yellow onion, cut into thin wedges
- 2 cups green beans ( fresh or frozen )
- cut into 2 inch pieces
- 1 clove minced garlic
- 1 medium yellow squash, halved lengthwise & sliced
- 1 medium zucchini, sliced
- 1/4 cup chopped fresh basil
- 15 ounce can drained butter beans
Eye of Round Roast

Preheat oven to 325 degrees
- 1 eye of round beef roast
- 1 Tablespoon olive oil
- 1 teaspoon salt, and oregano
- 1/2 teaspoon garlic powder, black pepper, and paprika
Black Bean, Corn, and Avocado Tacos

Preheat oven to 400 degrees
- 2 ( 15 ounce ) cans black beans,
- rinsed and drained
- 1/2 cup salsa
- 1 Tablespoon lime juice
- 2 Tablespoons minced cilantro
- 16 ounce package frozen corn, thawed
- 1 1/2 cups ( 6 ounces ) Pepper-Jack cheese, shredded
- 8 ( 10 inch ) flour tortillas
- tin foil
- 2 avocados, peeled and cut into thin wedges
- 1 Tablespoon lime juice
- salsa for garnish
Cherry Chocolate Bars

similar to a fudge-like brownie
- 10 ounce jar of maraschino cherries,
- drained, 3 Tablespoons juice reserved
- 1 box Devil's Food cake mix
- 1 egg
- 1/2 teaspoon almond extract
- or 1 teaspoon vanilla
- 1 1/2 cups chocolate chips
- 3/4 cup sweetened condensed milk
- 1/2 cup chopped pecans ( optional )
Uptown Okra and Tomatoes

Melt the butter, then add all the ingredients
- 4 Tablespoons butter
- 1 pound quartered tomatoes
- 2 pounds washed, trimmed, and sliced okra
- 1 minced yellow or red onion
- 1 clove minced garlic
- 1 Tablespoon sugar
- 2 Tablespoons fresh chopped basil
- 1/4 cup dry white wine
Japanese Method Perfect Cooked Rice

Rinse and drain rice 2-3 times to remove excess starch, which causes cooked rice to be too sticky
- 1 cup medium-grain white rice
- 2 cups warm water
