Lowcountry Pimento Cheese

for sandwiches or as filling for celery sticks
- 1 1/2 pounds grated sharp or extra sharp cheddar cheese
- 4 ounces soft cream cheese
- 3/4 cup mayonnaise
- 1 Tablespoon grated or very finely minced white onion
- 1 teaspoon cayenne ( or more, to taste )
- 1 ( 7 ounce ) jar chopped pimentos, drained
Shrimp Tacos

Combine the seasoning mix, garlic, and lime juice in a bowl

- 1 pound small or medium sized shrimp,
- peeled and de-veined
- 2 Tablespoons Old Bay brand fish seasoning

- 1 chopped white onion
- 1 clove chopped garlic
- 1/2 teaspoon coriander

Mandarin Orange & Avocado Salad

- 11 ounce can of mandarin oranges, drained,
- 3 Tablespoons of syrup reserved
- 2 Tablespoons olive oil
- 2 teaspoons cider vinegar
- 2 teaspoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
